Welcome to the Proofed Artisan and Traditional Breads Website.


As many of you know, there have been lots of changes in "The World of Proofed" over the last six months.
Larry, although still a valuable consultant and confidante, is no longer involved in the day to day operation.  I do, however, maintain the same recipes and
the very best of ingredients for every single loaf.
We no longer bake bread in Norton, MA, but in a small kitchen in Providence, R.I.
 


Customers ask "how do you make the bread taste so good?" The secret to our bread, well not really a secret, is that all the bread that we offer is mixed using the highest quality ingredients and baked fresh that morning.

In addition to our traditional breads we offer hand made artisan boules created using special baking process. All in all, it makes for a really long day, but it makes for some truly outstanding bread.

One of the questions most often asked is what does Proofed mean?  Proofed has multiple meanings depending on your point of view. In printing it means making sure everything is spelled correctly and the grammar is correct; in Math it means to provide the steps in proving your answer; in law it means providing evidence.  But...in baking it is the term used for the second rise of a yeast based dough.  "To Proof the dough" is standard terminology used in all bakeries.  Since all the varieties of bread we offer are yeast based breads and are proofed...hence the name.
